Gingerbread-Raisin Pancakes

Here is a recipe from my childhood. My mother used to make the most wonderful, nutritious pancakes, and this was one of my favorites!

2-1/2 cups unbleached flour 5 teaspoons baking powder 1-1/2 teaspoons baking soda 1 teaspoon cinnamon 1/2 teaspoon ginger 1/4 cup molasses 2 cups milk 2 eggs, slightly beaten 6 tablespoons butter, softened 1 cup raisins


Mix and sift flour, baking powder, baking soda, salt and spices. Combine molasses and milk; add eggs; stir in melted butter. Add molasses mixture to flour mixture; stir only until moistened. Stir in raisins. Bake on a hot griddle, using 1/4 cup batter for each pancake. Makes 20 pancakes.
