Inspired by the White Cheddar & Spinach Chicken Burgers recipe from ZestPlate.com . I use ground beef and replace the spinach with mushrooms, then serve on a plate topped with sauteed mushrooms.
Ingredients:
1 lb. ground beef
¼ c. onion or shallots, diced
¾ c. chopped mushrooms
1 tbsp. Dijon mustard
1 tsp. Worcestershire sauce
Sea salt and black pepper
1 tsp. minced garlic
Olive oil
¼ c. breadcrumbs
½ c. grated cheddar cheese
Mixture Preparation:
Combine ground beef, grated cheese, chopped mushrooms, breadcrumbs, garlic, and diced onion/shallot in large bowl. Add Dijon, Worcestershire, salt and pepper. Mix gently with hands just until combined - overmixing creates tough burgers.
Patty Formation: Divide mixture into four equal portions. Shape into ½-inch thick patties, making slight depression in the middle of each. This prevents doming during cooking. Chill patties 15 min. to help them hold shape.
Cooking Process:
Heat olive oil in large skillet over medium-high heat. Cook patties 5-6 min. per side until brown and internal temperature reaches 165 degrees.
Let burgers rest 5 min. before serving for maximum juiciness.
Serve on toasted buns, or on plate as patties topped with sauteed mushrooms.
