1/4 cup lemon juice 1/4 cup olive or avocado oil 1/2 cup each chopped fresh basil, mint, and chives 4 cups chopped fresh cucumbers 1-1/2 cups fresh corn kernels 1/2 red bell pepper, chopped 4 oz. crumbled feta cheese
In a large bowl whisk together lemon juice, olive oil, and 1/2 tsp. each salt and black pepper. Stir in herbs, cucumbers, corn, and bell pepper. Stir in feta. Cover; chill at least one hour. Season with salt and pepper.
Makes 10 servings.
