Lemony Cabbage-Avocado Slaw

Serves 6


Ingredients:

  • 6 cups finely shredded purple and green cabbage

  • 1 small red, orange or yellow pepper, chopped

  • 1 ripe avocado, diced

  • 2 tablespoons finely chopped red onion

  • 3 tablespoons lemon juice

  • 1/4 cup shelled hemp seeds

  • 3 tablespoons fresh cilantro

  • 1/4 teaspoon teaspoon fine sea salt

Method:

Toss all ingredients together in a large bowl, until avocado is creamy throughout.
