Cheese Sauce

from The Joy of Cooking, by Irma S. Rombauer and Marion Rombauer Becker Makes about 2 cups

Prepare: White Sauce (recipe on this blog page) When it is smooth and hot, reduce the heat and stir in: 1 cup or less mild grated cheese Season with: ½ teaspoon salt 1/8 teaspoon paprika A few grains cayenne (1/2 teaspoon dry mustard) Stir the sauce until cheese is melted.
